One 19-ounce can goongo peas, rinsed and drained

1 scallion, white and green parts, chopped

1 small onion, chopped

2 sprigs fresh thyme, chopped

2 teaspoons salt

1 teaspoon ground black pepper

1 clove garlic, chopped

2 cups coconut milk

3 cups uncooked white rice
